Dad’s Beef Stew

2lbs.Beef Stew meat
16oz. can of tomatoes
1 med. Onion chopped
1 clove of garlic minced
1 ½ tsp salt and pepper
1 ½ tsp. vegetable bouillon
½ tsp. basil crushed
3 carrots cut up
2 cups lima beans
1 lbs of potatoes cubed
1 cup peas
1 tbsp parsley

Tomatoes, garlic, salt and pepper, bullion, basil are to be mixed together and set aside. Cube potatoes, carrots, onions and mix them with peas, lima beans and parsley. Place vegetables in bottom of crock pot. Place beef on top of vegetables and cover with liquid mixture. Add two cups of water and cook on low for 8 hours. Great with cornbread!
